Restaurant Manager Required
The award-winning Restaurant at our clients gorgeous country house hotel is open to both non-residents, and hotel guests, daily for breakfast, lunch and dinner. Fresh ingredients and seasonal produce is the key to their kitchen’s distinct cooking style; light British modern with French influences. They use local produce in their menus as much as possible, sourcing their free range meats from nearby farms in Wiltshire and offers guests an the highest standard of service. Afternoon tea is served daily to residents and non-residents in the sitting rooms or outside in the flower filled courtyard and on the terrace. They also have a number of private dining and meeting rooms offering guests a unique dining or meeting experience.
They are looking to recruit a Restaurant Manager with a professional and enthusiastic manner who has an excellent knowledge of wine and fine dining. This position involves the day to day running of their two Rosette Restaurant breakfast, lunch and dinner service, as well as with the running of private dining, meetings, afternoon teas and weddings.
The right candidate will have experience of three Rosette quality restaurants, and have extensive wine knowledge.
Salary is negotiable dependant up on experience
Package is live out (temporary live in available up to six weeks) between £20 -£22K.
Outline of Restaurant Manager’s duties, expectations and company information
• Our clients Hotel is a 25 bed roomed property which sits on the outskirts of Bath and Bristol. The property enjoys a three star 82%, two rosette rating with the Automobile Association and expectations are that it will achieve Red Star (top 200) rating within the next twelve months. The Hotel enjoys a fine reputation for food, Head Chef is currently working to achieve his third rosette and Michelin recognition, the Restaurant Manager would be expected to help achieve these standards as well as build on them.
• The Hotel is owned by a chain of hotels who own over twenty five other properties, throughout the UK and Europe. There are ongoing expansion plans to increase the size of the group.
• The Hotel can cater for weddings up to 50 people. Weddings and leisure account for the majority of income in 2007.
• The Restaurant Manager requires an understanding of the F&B as well as C&B.
• The Hotel has a core of very good staff, many who are long serving and take pride in their workplace, Customer care is crucial, both internal and external customers are required to be looked after with internal customers receiving time to be trained, developed, appraised and managed.
Duties and Expectations
• Manage the business on a day to day basis with careful forward planning.
• Assist the General Manager to develop the business for the future, be creative and show the company the way forward.
• NNN – Network, nourish and nurture, internally and externally, you will be expected to develop your product, develop your team. Be an Ambassador for the hotel and brand.
• Attend company meetings, industry meetings and internal meetings.
• Comply with liquor licensing, health and safety, fire and protection services requirements.
• Assist in the preparation of competent budgets, forecasts and strategy plans as and when required.
